3 cups leftover vegetable ends
Add vegetable ends in the soup pot.
1 cup diced onion
Add onion in the soup pot.
1/4 cup cold water
Dilute miso in cold water and add the broth. Cover and simmer over medium heat for 3 hours or just 30 minutes if you prefer to use a pressure cooker. Allow to cool. Put colander ovver large bowl or pan and drain.
Reserve stock and discard vegetable leftovers.Vegetable ends may be save in a basket and kept in a dry place for up to one week.
